500g McCain peas 1 onion, finely chopped 2garlic cloves, crushed 3 Tbsp. (45 ml) Flora Gold 125ml chicken stock 2stalks of fresh mint Robertsons Black Pepper Robertsons Atlantic Sea Salt Pinch of sugar (optional) Fresh Mint to garnish Extra Flora Gold to serve
Preparation (for 4 portion) for
FLORA MINTED GARDEN PEAS
- Heat 30 ml Flora Gold in a pan over medium heat. Add the onion and crushed garlic then sauté for a few minutes until they just begin to brown.
- Add the peas, chicken stock and mint stalks. Bring to a rolling boil. Season and add a pinch of sugar.
- Stir the peas and onions and boil for about 5 minutes until the peas are cooked. Drain and add the remaining 1 tablespoon Flora Gold and some black pepper. Remove the wilted mint leaves and discard. Serve once garnished with some fresh mint and dollops of Flora Gold.
