250ml ( 1 cup) quinoa 15ml ( 1 TBSP) Flora Vegan 1lt ( 4 cups) water 5ml ( 1 tsp) salt Vegetables: 250ml ( 1 cup) cubed butternut ½ red onion, sliced 30ml ( 2 TBSP) Flora vegan 500ml ( 2 cups) baby spinach, washed and shredded 1tin black beans, drained and rinsed 250 250ml ( 1 cup) frozen corn (defrosted) ½ red bell pepper, thinly sliced ½ yellow bell pepper, thinly sliced 2avocados peeled and sliced. Dressing: 20ml Flora vegan Juice of 1 lemon 30ml ( 2 TBSP ) sweet chilli sauce 30ml ( 2 TBSP ) chopped coriander

Preparation (for 4 portion) for

Fresh And Zesty Quinoa

Place the quinoa, water, Flora and salt in a pot and boil until the quinoa is soft and the water is dissolved. Drain in a sieve and leave to cool. Place the cubed butternut and sliced onion on a baking tray, dot with the flora, season with salt and pepper and roast at 180 C until golden and soft. Prep the remaining ingredients. In a large flat bowl, or 4 individual bowls, place the quinoa at the base and cluster spread the vegetable ingredients over the quinoa. Sprinkle with salt and pepper. To make the dressing, melt the Flora, add the remaining ingredients, stir well and drizzle over the salad.
