Bacon Jam 4 Tbsp (60 ml) Flora Gold 2 x 200 g packets diced bacon 6 shallots, finely diced 4 garlic cloves, finely grated ½ C (125 ml) brown sugar ¾ C (180 ml) balsamic vinegar ¾ C (180 ml) red wine vinegar 4 sprigs of rosemary, picked Sandwich Assembly 8 slices sourdough (or bread of choice) 200 g brie cheese, sliced Extra Flora Gold for spreading To Serve 1 Tbsp (15ml) finely chopped chives
Indulge in a gourmet twist on the classic braaibroodjie with this Bacon Jam & Brie creation. Creamy brie cheese meets the irresistible smokiness of bacon jam, sandwiched between two slices of perfectly toasted bread.

Homemade Bacon Jam & Brie Braaibroodjies
Bacon Jam
Melt the Flora Gold in a large pan over medium heat, once heated, add the bacon bits. Fry for 5 minutes, then add the shallots and garlic. Sauté for another 5 minutes until the bacon is crispy.
Add the sugar, balsamic and red wine vinegar, and reduce the heat. Slowly cook the mixture until sticky and reduced, about 10-15 minutes. Add the rosemary and turn off the heat.
Sandwich Assembly
Prepare the sandwich slices by generously spreading Flora Gold on both sides of the bread. Assemble the sandwiches by placing brie slices and bacon jam onto each, and closing with a second slice of bread. Pop into a sandwich grid and toast over a medium-heat fire until golden brown on each side. Turn every so often so that the bread browns and toasts evenly, the filling heats through and the cheese melts.
To Serve
Garnish with chopped chives and serve with your favourite fresh green salad.
