200g raw buckwheat 100g whole almonds, chopped 1tbsp lemon juice 2tbsp Flora regular 0.5 cup honey or maple syrup 200g sunflower seeds 0.5 cup sesame seeds 0.5 cup poppy seeds 1tsp ground cinnamon 1tsp mixed spice 65g dried goji berries

Preparation (for 4 portion) for

  1. Place the buckwheat, almonds and lemon juice in a medium bowl, cover with water and refrigerate overnight.
  2. Preheat the oven to 150°C. Drain the buckwheat mixture and rinse thoroughly.
  3. Melt the Flora regular in the microwave and mix in the honey.
  4. Combine the buckwheat and honey mixture in a large bowl with the rest of the ingredients, keeping the goji berries aside.
  5. Toss to combine and spread evenly over 2 baking trays lined with non-stick baking paper.
  6. Bake, stirring occasionally, for 45–50 minutes or until golden and crisp.
