250ml Milk 10g Instant yeast 3ml Bicarbonate of soda 450g Flour 5ml Cinnamon 0.5 tsp salt 100g Flora Gold 100g Castor Sugar 100g Fruitcake mix 100g Raisins 2Jumbo eggs, beaten 30ml Honey Spread: 180g Flora Gold 60ml Honey 1 tsp Mixed Spice and Cinnamon

RAISIN BREAD WITH SPICED HONEY SPREAD

Preparation

  1. Preheat oven to 180°C
  2. Place milk, yeast and bicarb in a jug and set aside until bubbles form
  3. Mix flour, cinnamon and salt together in a bowl
  4. Rub in Flora Gold and stir through castor sugar and fruit
  5. Make a well in the centre and add milk mixture and eggs
  6. Mix until well combined
  7. Tip dough into a prepared pan and set aside to prove until doubled in size
  8. Bake for 40-45 minutes, then cool slightly and glaze with honey
  9. Beat spread ingredients with an electric beater until pale and fluffy
  10. Serve bread with lashings of spread
